Micro-element analysis in wine and grapes

Author(s): Eschauer H, Neeb RE

Abstract

The number of inorganic and organic compounds which have been identified and determined in wine so far may well approach 1000. Only about 50 of these are inorganic compounds, and their number is limited by the number of elements in the Periodic Table. “Per definitionem vinum”, the concentration of a mineral in wine is at most 1000 mg l-1, that of a trace element lies at around 1 mg l-1 or below (ppm range) and that of an ultra-trace element at around 1 μg 1-1 or below (ppb range). The number of inorganic substances present and the concentrations thus outline the scope of trace element analysis in wine.
